Pairing Vinegars with Oils
The classic combination is straightforward: good oil, good vinegar, a pinch of salt. Start with a 3:1 ratio of olive oil to vinegar and adjust to your taste. Match the intensity of the vinegar to the oil. A bold aged balsamic pairs with a peppery Italian olive oil. A delicate raspberry vinegar works better with a mild French or Spanish oil.
