The hand-harvested fruit undergoes careful fermentation and matures for at least six months in glass or steel, occasionally with brief wood aging. Its aroma reveals a complex bouquet of nutty marzipan, floral elderflower, and red clover nectar, enriched by notes of honey spice, cocoa, mint, and subtle earthy hints reminiscent of hay and roasted chestnut.
On the palate, it balances gentle sweetness—marzipan, honeyed fruit, and almond richness—with fresh herbal undertones and layered spices such as cocoa and caraway.
