Crafted by Cheval Quancard near Bordeaux, the Chai de Bordes is their signature Bordeaux AOC blend, predominantly made up of around 80% Merlot and 20% Cabernet Sauvignon, with occasional small amounts of Cabernet Franc depending on the vintage. This wine exhibits a lively ruby-red color and presents a subtle yet inviting aroma profile featuring wild blueberry, dried plums, prunes, and stewed fruit, accented by rustic earthy spices. On the palate, it is full-bodied and well-structured, highlighting ripe Merlot smoothness balanced by soft tannins and moderate acidity. Flavors of red and black plum, blueberry, and gentle herbal spices are complemented by hints of cedar or oak. The finish is long-lasting and balanced, with persistent fruit notes, a firm tannic backbone, and mild earthy-spice complexity. Best enjoyed lightly decanted at 16–18 °C, it pairs beautifully with roast poultry, grilled veal or beef, game, and soft cheeses such as Emmental.
