Wild Garlic Pesto is a pesto spice mix made with wild garlic (21%) and pine nuts (20%), plus onion, garlic, rock salt, tomato flakes, basil, paprika and pepper. It goes with pasta dishes as a classic pesto, and also works for dips or herb butter. It may contain traces of mustard and celery.
Preparation: Mix 2 tablespoons of pesto with 2 tablespoons of water and let it swell briefly. Then stir in olive oil.
Store in a cool, dry place.
